Ingredients:
- 1 Quart of organic seedless blackberries
- 2 Cups of organic sugar
Equipment:
- Large saucepan
- Glass jelly jars, lids and rings
- Ladle
Instructions:
- Place washed blackberries in saucepan and add 1 cup of sugar
- Cook over low heat, stirring constantly until the berry juices and sugar mix
- Continue to stir mixture to prevent from sticking to bottom of pan with heat on low setting for 30 minutes
- Remove pan from heat and allow blackberry mixture to cool
- Return pan to low heat and add remaining 1 cup sugar
- Cook mixture an additional 20 minutes, again stirring occasionally
- Remove pan from heat and allow blackberry mixture to cool
- Pour into hot glass jars, place lids and tighten rings
- Keep fruit spread stored in refrigerator

Below are is a recipe using organic blackberry spread.
Easy Fast Blackberry Fruit Spread Cake
- 1 Box of Organic Yellow Cake Mix
- Prepare cake mix according to box instructions
- Omit 1/3 cup of water
Add:
- 1/2 of half-pint jar of organic blackberry spread
- 1 Teaspoon organic vanilla extract
- May use organic maple extract instead
- Chopped nuts (optional)
- Organic pecans or organic walnuts
Thoroughly mix all ingredients together and pour into a 13" bundt pan. Bake according to time and temperature recommended in baking instructions on cake box. Once baked, remove from oven and allow to cool before icing.
Blackberry Icing:
- 3 Tablespoons of organic blackberry spread
- ½ Teaspoon of organic vanilla extract
- Organic powdered sugar, enough to thicken icing.
- Glaze, consistency needs to be thin but not watery
- Icing, consistency needs to be thicker

You may also want to check your local farmer's market for individuals who grow organically but aren't certified.
